Yoghurt Rice Recipe

Curd rice recipe is one of the favourite Dahi recipes across India, especially cherish by the people of South India. For preparing curd rice, it is suggested to take quality rice weighted 250 gram. Boil the rice and make it cool before mixing other ingredients. The proportions of other ingredients should be as follow: Curd (250 gm), Curry leaves (4-5), Vegetable cooking oil (3 tsp), Water (1 litre), Mustard seeds (1tsp), Chilly (½ tsp).  Mix curd with rice. Now, heat the vegetable oil on a fry pan and mix mustard seeds, dried red chillies and curry leaves, till all the components become red. Add this mixture with the mix of rice and curd. Mix it properly and serve with pickle. Sugar or salt may also be added for taste purpose. It has many health benefits. A person who is underweight or feeling weakness may take this recipe on regular basis.

How to make Dahi Bhalla ?

Dahi Bhalla or Paapri Chaat is one of the popular curd recipes among Indian. Dahi Bhalla is made from the ingredients of paapri, bhallas, chutney, dahi. For preparation of paapri, ingredients like maida, oil, ajwain and salt for taste has to be arranged. Mix all these ingredients as per the requirement and make dough for chappti. Now, fry these chapattis to make paapris.  In making of bhallas; moong, urad, zeera and oil is arranged. Before grinding both the pulses, soaked them well in water for 2 to 3 hours. Mix it well till it become fluffy and pummel. Fry the pummel until it becomes brown. Chutney is prepared preferably from coriander and pudina leaves. Sweet chutney is also prepared from tamarind and sugar. Curd is taken as per the requirement of serving and quantity of the matter.  Now, all the ingredients are fully ready in making of Dahi Bhalla.  Put bhallas and paapri chat on the plate and mix it with curd, khatti chutney and sweet chutney, Chat masala may also be added simply to add the flavor.

Beetroot and Pomegranate Raita

Ingredients: Beetroot (50 grams), Curd (150 grams) and 50 grams of fresh pomegranate seeds

Seasoning: ½ tsp of sugar, salt and pepper to taste

Method: Grate beetroot. Beat curd well. Now add sugar, salt and pepper to beaten curd. Add beetroot and pomegranate seeds. Mix well. Chill and serve.

Cucumber Raita Nutritive Value

Ingredients: 2 cucumbers (200 grams), curd (150 gms), oil (1tsp), mustard seeds (½ tsp), pinch of asafetida, 2-3 curry leaves, cumin powder and salt to taste.

Method: Chop cucumbers coarsely, Beat curd well. Mix cucumbers with curd, adding salt. Heat oil, add mustard seeds, asafetida, curry leaves, cumin powder and salt. Pour seasoning over curd. Mix well. Cool and serve.

How to Prepare Bottle Gourd Raita?

Ingredients:  In making Bottle Gourd raita, 50 grams tender bottle gourd, 1 cup of curd, 2 tsp of lemon juice, 1 tsp of chaat masala, salt to taste and 1 tsp roasted cumin seeds are required as ingredients.

Method of preparation: First of all, wash the gourd to remove dust and dirt. Peel and grate the gourd followed by boil till it become tender. Squeeze out water. Mix in lemon juice and chill. Beat curd in a bowl, add salt and cumin seeds. Add chilled gourd. Sprinkle chaat masala on top to make it delicious.
